OLIVETTA SAN MICHELE FRACTION OF THE MUNICIPALITY OF VENTIMIGLIA IN LIGURIA - ITALY
It is a small village perched in the midst of the greenery of Ligurian nature, its municipality is home to 191 inhabitants and is the westernmost municipality in the Ligurian region, in the west.
Asago is a type of meat that is produced in Argentina, the association (R'Amig d'ee Pilon d'Oc comitato festeggiamenti Olivetta S.Michele) have reproduced it in a more Ligurian guise.
They tell me that this idea came from a member of the association, who some time ago knew Mr. Claudio di Levanto, he taught them the process of how to cook this type of meat.
Asado means grilled. It is a cooking method born in the endless Argentine prairies, the original name is Asado de Tira, a typical Argentine grill cut, obtained from the ribeye of beef. The cooking is very long and takes many hours.
